Your friend is complitely wrong. You do need rest days for your body to recover and your muscles to grow. If you don't rest, your muscles won't have the time to grow. Also if you're working out too much or too intensely on a regular basis, this is going to push your body's stress response too far causing conditions like hyperthyroidism (increase of body fat, depression... just to mention some effects it has). Hyperthyroidism might be an extreme example, but there's something else that's going to happen as soon as you start to overtrain, which is an increase in cortisol, the "stress hormone". High level of cortisol causes different issues... weight gain, depression, insomnia, memory diminuition. And I'm sure you're not looking forward to any of this.

I don't know what your friend means by your muscles having to 'start over' from skipping just one day in your workout but it sounds like a load of shit.
It's actually recommended that you take a break day, or lower-intensity workouts, after a few days of your regular routine. Does your friend know that muscle needs a bit of rest and recovery time to actually be successfully built, and that if you don't give your body a bit of a break once in a while, you'll be more prone to injury and completely burning out?
Your friend is full of shit! You actually do need days off to rest your body. Going every day can lead to burn out and injury! Basically when you work out you are introducing small tears into your muscle fibers. Your body repairs these tears and build them up with a layer of protein. It generally take 36-48 hours for the healing to be completed. Then, if you do not work out the layer of protein starts to diminish. But that takes several days to weeks depending on how thick that protein layer is. You can work out every day, but you need to focus on different body groups. For example, do legs one day, then arms the next, then repeat. This way each group gets a day of rest in between work outs.
I don't know about restart but you need to rest in order to recover. Your body's way of preventing the amount of muscle tears you obtained through the workout you were doing is by making your muscles come back stronger and tougher.
It can't do that when it's still being used.

no, you won't need to start over. it's really no problem to take a day off once in a while. in fact, if you are doing lots of weight training it's recommended to let your muscles mend from an intense workout. "Persistence is key. Don't give up!" - is more like, don't do it for only a week and expect to see major results. it takes time for your body to change and adapt to new habits you've picked up (aka. exercise). I would personally only do weight training 3-5 days a week (I do 3 and I'm seeing some changes)
