There is nothing you could do unless you report it to the police. Why don’t you fight back if someone attacks your child you wouldn’t fight back?
I can’t fight back he’s way stronger than me. He used to wrestle, lift weights, like bench press, and deadlift also he did track and karate almost to a black belt. I may be a big girl but I’m a weakling compared to him. I also would fight someone if they attacked my child but I’m 15.

That would be assault. If he's leaving bruises then it's aggravated assault and actual bodily harm.
From there it's a small step to grievous bodily harm and worse.
If he's assaulted your grandparents as well and they've not done anything then I'm really sorry, but you're going to need to be the adult in the home and call the cops. Go to an ER to have bruises officially documented and lay charges before he kills someone.
You either report him or you teach him a lesson and no I don't mean clobber him back. If he really wants to be a children's therapist a blemish on him treating you the way he does would make him stop.
Setup a nanny cam and get some video of him being abusive, be sure it uploads to your cloud. Once you have the video, forward it to him and tell him if he touches you again, you'll send it to every school he could possibly apply to work with children. That video would effectively end his career before it even starts.
Sometimes you have to be smarter when it comes to abusive types and use what you have to protect yourself.
People with mental problems often aspire to become therapists in the same way that prisoners may want to become prison guards (Stockholm syndrome.)
If your grandparents are not willing to address this problem, then you should discuss it with a teacher or school counsellor. There are things that can be done to prevent your brother from abusing you.

He's teaching you how to become an angry person and he's also teaching you that you have to hit people to get them to do whatever you want them to do and that's bullshit he needs to grow up

You call 911 and show them the bruises. You aren’t obligated to go anywhere with him.
Do you know why he is abusing you? Because you’re letting him and I understand it can be easier said then done. But you need to call 911 and explain exactly what is happening.
Also make sure to file charges. Don’t back out of filing charges at the last minute. Go through with it
He needs therapy and to move out, not necessarily in that order.

At your age you may not have much say in what happens but you should talk to your grandparents about how you feel. You have a right to your feelings and they should be heard. If nothing changes then nothing changes. The journey of a thousand miles start with the first step. Your first step is to talk about it. Start the process for change to happen.
I am sorry that they don’t seem to care. You deserve better. I won’t talk bad about them since I do not know their story. It could be that they were mistreated to the point that they think it is normal. But you know it is not…. Are there other family members that you could go stay with?
@nawtee_me I know their background they had a good family and weren’t mistreated. I don’t have any other family members to stay with.

It's both abusive and criminal. You can call the police or child protective services.
Here in Georgia, you can call 911 and request a 311, which will result in a county mental health professional arriving to negotiate with him, with the cops as back-up.
